Raw Amberjack fish small chunks, in an emulsion of oranges and raspberries, salmon eggs, and seasonal sprouts

Risotto Carnaroli with sicilian red shrimps* essence of mandarin and  extra virgin olive oil with rosemary

Red snapper breaded with dried tomato and cuttlefish ink on a sauce of clams, capers, pine nuts and saffron pistil
